Lemongrass hits first, then the warmth builds. Bun Bo Hue (say it "boon baw hway") is the bold cousin of pho, born in the old imperial city of Hue in central Vietnam.

We start with the same patient 16-hour beef broth, then layer in lemongrass and a touch of fermented shrimp for that deep, unmistakable savour. Round rice noodles, tender beef and fresh herbs finish the bowl. It arrives medium-spicy, and you steer it from there with chilli and lime.

If pho is a warm hug, this one has a bit of fire in it.
